Lasagna Roll-Ups.... A quick and satisfying weeknight fix!

My Lasagna Roll-Ups are a quick way to fix a hearty yet healthy, soul satisfying dinner for your family in minutes. Kids love this dish and can even help you make it if you need a couple extra hands. Make a little extra and pack leftovers for lunch the next day. Wanna incorporate some more veggies?? Just add a handful of thawed frozen spinach to the ricotta mixture. No matter what this recipe is sure to please the whole crowd!

Ingredients:
1 lb Ground Turkey Meat (can substitute chicken or lean ground beef)
1 pt part skim ricotta
1 egg
1 box lasagna noodles
1 jar of your favorite jarred tomatoes sauce
¼ c grated Parmesan cheese
1 10 oz package part skim mozzarella
1 tbsp garlic powder
Salt & pepper
Handful of chopped Italian parsley

Directions:
Pre heat oven to 400◦ . Boil lasagna per directions on box. Meanwhile, brown meat in a pan and drain fat. Return meat to pan and add sauce. In a medium sized mixing bowl, add ricotta, egg, Parmesan, garlic powder, handful of parsley and mix with a fork until incorporated. Drain pasta and rinse with cold water. Grab a 9x13 baking dish, spray liberally with non-stick cooking spray. Spoon a couple of spoonfuls of sauce into baking dish-enough to just wet the bottom of the dish. On a clean cutting board (or counter top) take a lasagna noodle and lay out flat. Scoop some of the ricotta mixture on to the lasagna noodle and spread down the length of the noodle about ¾ of the way. Starting with the end you plopped the ricotta on, roll up to the end. Pick up the roll and place in the baking dish seam side down. Repeat until dish is full. Pour the remaining sauce over top of the roll-ups. Bake for 25 minutes, remove, cover with mozzarella cheese and return to oven until the cheese is melted to your liking.
