Strawberry Short/Angel Food Cake

Its that time of year again. Strawberries are ripe for the pickin'! This is a quick and healthy recipe for Strawberry Short/Angel Food cake that I love. Its light and fresh and goes great with just about any meal though I especially like it with bar-b-que. The angel food cake is a healthy alternative to the shortcake. Pound cake also works great with this but it is substantially more calorie heavy.

Serves 6
1 qt of strawberries
1/2 c granulated sugar
½ lemon
1 tsp lemon zest
Pinch of salt
Angle food cake (you could also use a pound cake if you’d like- the angel food is just a healthier alternative)
1 pt heavy whipping cream
1 tbsp confectioner’s sugar
1 tsp vanilla extract
For strawberries:
Clean strawberries under cold water to remove any sand or dirt. Cut of the top of the berries to remove the leafy greens and stems. Cut strawberries into quarters or sixths dependent on berry size.
In a Tupperware container with a tight seal, add strawberries, sugar, salt, lemon zest and juice of lemon. Seal the Tupperware and shake the container vigorously until strawberries begin to breakdown and become juicy. This normally takes a few minutes of good shaking. You want the strawberries to release their liquids and make a sauce.
Refrigerate the Tupperware while you make your fresh whipped cream.
For whipped cream:
Add whipping cream to a large mixing bowl. Using an electric mixer, whip on high until cream doubles in volume. Add confectioner’s sugar. Continue to beat until whipped cream forms soft peaks.
Hint: You can check your peaks by turning off your mixer, submerging the beaters in the whipped cream, removing and turning upside down. If your whipped cream stands up and softly folds over you have soft peaks.
Slice your angel food cake into 1-2” slices and place in dish. Top angle food cake with a healthy ladle of the strawberry sauce making sure to get some of the liquid on the cake. Top your strawberry shortcake with a dollop of whipped cream.
